you see...a few years ago i definitely wasn't a whiz in the kitchen. 10 years ago you would have found me parked in front of the TV eating life cereal for dinner.
dear god - how i loooooove life cereal. if i had it my way i would still eat it every night.
...i can't do that to my family.
to make things a liiiiiitle bit harder, all of my recipes HAVE to be on the healthy side. i'm talking lean // clean // green.
my poor farmer - because i know so many men who strive to eat lean // clean // green.
i'm always trying to come up with recipes that will be delicious for kaye and my farmer, easily adaptable for sawyer, and easily adaptable for my dietary needs.
when it came to me...quinoa stuffed shredded chicken tacos!
get on board friends...they are so yummy.
farm food | QUINOA STUFFED SHREDDED CHICKEN TACOS
ingredients
for the taco
+ 1 cup uncooked quinoa (you'll have leftover, but quinoa is good with everything and keeps for a long time.)
+ 10 ounce can green chiles
+ 1 tsp chili powder
+ 1/2 tsp cumin
+ 1/2 tsp garlic salt
+ 1/4 tsp paprikia
+ 1/4 tsp cayenne pepper
+ 2 chicken breasts // prepared // shredded
+ 1/4 cup red onion
+ 1 cup diced tomatoes
+ 2 tbsp chopped cilantro
+ whole grain tortillas
+ shredded cheese of choice
+ sour cream
for the healthy guacamole
+ 1 avocado peeled // diced
+ 1/4 cup salsa of choice
+ 1/4 tsp chili powder to taste
+ 1/2 tsp garlic salt to taste
+ 1/2 cumin to taste
+ 2 tbsp cilantro
+ 2 tbsp finely chopped red onion
+ juice 1/4 lime (or a splash of lime juice)
1 | cook your quinoa. quinoa is always the ratio 1 | 2. so if you have one cup of dry quinoa, cook it in two cups of water. so simple.
2 | as your quinoa is cooking shred your chicken breast and put it in a pan on low heat. add all your spices and then throw in 1/2 cup water so it's nice and moist. once the spices are distributed add in your red onion // tomatoes // cilantro. let those simmer together for five minutes.
3 | while your chicken is simmering on low make your guacamole. throw in all the ingredients together and mix mix mix!
4 | your quinoa should be done by now! (it usually takes 10 minutes.) add 1/2 cup of your cooked quinoa. you can totally add more if you want!
5 | prepare your tortillas - yesterday on snap chat (karli-bell) i showed how i spray my tortillas with a tiny bit of coconut oil and heat them up in a pan, but you can totally put several in between two wet paper towels in the microwave for 30 seconds so they are nice and soft.
6 | assemble your taco - jut throw the filling in the shell and top with cheese! you can get really crazy and bake your taco so the cheese gets nice and melted. throw on a dollop of sour cream and a dollop of guacamole and you're in business!
when i prepare for sawyer (since she can't really hold a taco) i mix all the ingredients in a bowl (no shell) and hand it over. done and done.
when i prepare this meal for myself (remember lean // clean // green) i throw about two cups of spinach on a plate, add the chicken and quinoa filling on top, and top with a little guacamole, which serves as my dressing. no sour cream. no cheese. HEALTHY! (and totally filling.)
i can't recommend these tacos enough. it was a totally family win!

ReplyDeleteQuinoa is my go to for many meals. I usually add meat, veggies and call it a meal. Have you tried millet or farina? A good change from quinoa and full of good stuff.
